SELECTION AT THE WINERY
After an initial selection of the healthiest clusters in the vineyard, the grapes are collected in small crates. Upon arrival at the crush pad, a second manual selection takes place.

MONOTORING OF FERMENTATION
The grapes remain in tanks for about 25 days, undergoing the first alcoholic fermentation at controlled temperature, which will last for about 10 days, followed by 15 days’ maceration in order to extract the maximum colour, tannins and aromas.

PUMPING OVER WITH MOBILE TANK (OVI)
The complete vinification process is done by gravity, and pumps are never used to transport the crushed grapes, even for pumpovers during fermentation. This prevents the pips from breaking and contributing sharp tannins and bitter flavours.

BARREL AGING

Barrel ageing takes place for 12 to 36 months in the underground cellar, where ideal temperature and humidity are maintained in a natural way. Here, the wine achieves a perfect balance with the contribution of the wood, while it matures with the passage of oxygen through the staves. During this time, 3 or 4 rackings a year are carried out to remove the impurities that have precipitated.

Depending on the personality we wish to give the wine, we choose barrels made with different types of oak (American, French, Romanian...) and different degrees of wood toasting.

The wine is aged in the bottle for a period ranging from 12 to 36 months or even more. During this process, the wine acquires the maturity and finesse required for perfect enjoyment.
