I. VARIETALS: 100% Viura.

II. ALCOHOL: 11,5% Vol.

III. VINEYARDS AND HARVEST: The grapes come from the property owned vineyards located in Grávalos, on the southern slopes side of Mount Yerga at an altitude of between 700 and 800 meters. A very high located area where you obtain fresh wines with little graduation, with very fine and elegant aromas. The Viura grape is harvested during the two first weeks of October. The collection of the grapes is done manually. By selecting the grapes, we avoid deteriorated grapes from reaching the press and the quality required to elaborate our Cavas is maintained.

IV. ELABORATION: The run juice obtained by mild pressing will be destined for our Cavas. The first fermentation takes place in stainless steel at low temperature at 14ºC. At the beginning of spring, once the wine is clean, the 2nd fermentation takes place inside the bottle and the 36 months aging process begins.

V. TASTING: Lemon yellow with steely glare. Fine bubble that forms a small string of slow evolution. Great intensity of pleasant aromas due to the aging and the proper variety. We descover fruital aromas (apple). Pleasant in the mouth with light acidity and a very well integrated bubble. Light run through and a good final impression. Apple aftertaste.

VI. FOOD MATCH: Hot and cold starters, fresh foie gras, caviar. Goes very well with most dishes provided that there are no condiments as very strong paprika.
