The cava of the Gods

I. VARIETALS: 50% Chardonnay, 50% Viura.

II. ALCOHOL: 12,5% Vol.

III. VINEYARDS AND HARVEST: The grapes come from the property owned vineyards located in Grávalos, on the southern slopes side of Mount Yerga at the foothills of the “Cordillera Ibérica” at an altitude of between 700 and 800 meters. A very high located area where you obtain fresh wines with little graduation, with very fine and elegant aromas. The Chardonnay grape is harvested during the second or third week of October. The Viura grape in the first two weeks of October. The collection of the grapes is done manually. By selecting the grapes, we avoid deteriorated grapes from reaching the press and the quality required to elaborate our Cavas is maintained.

IV. ELABORATION: Only the run juice, obtained after a mild pressing, will be destined for the elaboration of “Dioro Baco”. The first fermentation takes place in stainless steel at low temperature at 14ºC. At the beginning of spring, once the wine is clean, the 2nd fermentation takes place inside the bottle and the 24 months aging process begins.

V. TASTING: Brilliant straw yellow. Extraordinary effervescence with a fine and persistent rosary of bubbles. Fine aromas of dried nuts and honey with floral notes. Sweet with a delicate freshness provided by the high acidity.

VI. FOOD MATCH: All kind of sweet desserts.
