Winery

The vineyards are closely monitored throughout the year. At harvest time, grape picking is scheduled on a daily basis after checking all ripening parameters. The grape harvest is carried out manually, with a first selection at the vineyard and a second selection at the winery.
Vinification
The grapes are subjected to light pressing and the free-run must, obtained without any pressure, is used to make the various cavas. The musts with the highest concentration are fermented in 225 litre oak barrels to produce extremely concentrated cavas.
The cavas are made in the traditional fashion, according to the Champenoise method. Bottle fermentation and ageing over lees sur latte lasts between 2 and 7 years.
