OLD VINES
WINTER IN THE VINEYARDS

The geography of Castile and Leon is like a map carved with vineyards.

In the past, in most villages wine was made in underground cellars.

With the idea of expanding our range of wines, we chose old vines planted on poor soils with low grape productions.

The main grape variety (70%) of these old vines is Tinta del País (Tempranillo). Other varieties include red Garnacha and Rufete.

Vinification is carried out with local yeasts from the vineyard and followed by 28 days’ maceration to extract this wine’s great personality.

The wine is then put in barrels —50% French oak, 25% American oak, 25% Romanian oak— where malolactic fermentation takes place. It is barrel-aged for 14 months. During this time, it was racked four times.
